Gina’s Banana Bread

Named after a dear friend


4oz Butter

6oz Demerara/light brown sugar

8oz Self raising flour

2/3 Very ripe bananas

Chocolate drops (optional)

2 Eggs

Pre-heat the oven to 160°C, 325°F or gas mark 3

1) Grease a loaf tin

2) Mash the bananas with a fork

3) Cream together the butter and the sugar until light and creamy

4) Add the eggs

5) Mix in the flour

6) Add the mashed bananas to the mixture (if adding chocolate add after the bananas)

7) Pour into the loaf tin

8) Bake for 40 minutes then reduce the temperature to 130°C 250°F or gas mark ½ and bake for a further 30 minutes (or until done)

When I was looking for a recipe for Banana Bread a friend of mine came to the rescue with her favourite. She knew we were chocoholics, so this recipe was right up our street. When Gina was taken from us suddenly, it seemed fitting we should rename this after her.  Thanks to Gina’s family for their permission to do so. Gina remains a bright light in a dark sky and a constant reminder of how important our friends are.
